The Perfect Chocolate Cupcake

These are the most moist and delicious chocolate cupcakes I have ever eaten! One bite of these babies and you will be in chocolate heaven :) Adapted from Cooks.com (chocolate mayonnaise cake)
Ingredients
  • 2 cups all purpose flour
  • 1 cup white sugar
  • ½ cup cocoa, sifted
  • 2 tsp baking soda
  • ¼ tsp salt
  • 1 cup full fat mayonnaise
  • 1 tsp pure vanilla extract
  • 1 cup milk or water
Instructions
  1. Preheat an oven to 350 F and line 20-24 cupcakes liners.
  2. Sift together the flour, cocoa powder, baking soda and salt together in a medium bowl
  3. In a large bowl, add the mayonnaise, sugar, vanilla and milk (or water) and mix well.
  4. Dump the dry ingredients into the wet ingredients and mix until the batter is smooth.
  5. Portion out the batter into the cupcake liners, filling them ⅔ full.
  6. Bake in the oven for 15-20 minutes or until a toothpick inserted into the cupcake centre comes out clean.
  7. Let them cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before frosting them.
Notes
To turn this into a cake instead of cupcakes, divide the batter between two 9 inch round pans, two 8 inch round pans, or one 13x9 pan. Baking times will vary.
